It's definitely possible. The only thing you can't do is combine different GPUs, like a 1070 and a 1080.

Both of these setups are still in use in TBG systems, and the mixed 1070 pair is much easier to manage thermally than the matched 1080s.

Ha, ha, jumping the gun a bit, aren't you? The 1070 Ti hasn't even been announced yet, let alone released and reviewed!

But based on specs, the 1080 is clearly still faster, and the same would hold true for 1080 SLI.

Quick follow-up: with the GTX 1070 Ti now being announced, and stock-clocked Asus cards up for pre-order at $500, it's abundantly clear that the 1070 Ti is completely irrelevant from a gaming perspective.

The true purpose of this card is Ethereum mining, and with superior GTX 1080 cards going for just $30 more, the 1070 Ti will not be appearing in any guides on TBG. The AMD Vega 56 and 64 are likewise irrelevant from a gamer's point of view. All these cards offer lower performance/dollar than was available at the beginning of 2017, before the mining craze hit full swing.

The only real problem I see is that the 1070Ti is priced right at pre-mining-craze 1080 prices. Which I'm thinking means 1080 prices aren't ever going to drop sub-$500 now, which is disappointing.

Agreed. This year has been challenging with regard to component prices. Nearly everything has increased in price over the last six months. RAM, SSDs, video cards, cases, power supplies. If not for Ryzen, CPU prices would have gone up too.
